Gebhardt's Chili Powder Co. « La Cocina Historica
post this week is the company a former San Antonio-Gebhardt's Mexican Foods. In 1896, Willie Gebhardt established Gebhardt Chili Powder Company Eagle Brand. For nearly a century, the company produced the chili powder, canned chili, canned tamales, and many other food Tex-Mex in San Antonio - first as an independent company, then as a subsidiary Beatrice Food Company. Gebhardt is now owned by ConAgra Foods, and while the San Antonio plant has closed some of the products developed there are still available in stores.
When Gebhardt started selling the chili powder, its market was limited by the fact that Americans outside of Texas do not know how to cook with it. In 1908, the company has released Mexican Cuisine, one of the cookbooks Tex-Mex first. This book introduces Americans to what would become one of the most popular cuisines in the country and promote the use of Gebhardt chili powder over similar products. The book warns that "The success of Gebhardt chili powder naturally has brought forth a host of parasites chili powder or compounds of which the public should be aware ..." and goes on to say that Gebhardt is the only product that offers "That Real Mexican Tang. "*
Gebhardt has used this same technique to promote products later as canned chili, canned beans and stuffed with red meat. While the brochures describe the revenue "real" Mexican food, it is unlikely that the Mexicans will recognize much of its content.Receipts include "Spicy Deviled Eggs," "Hominy and Chili Scramble" and "Beans Gebhardt Cups tomatoes."
UTSA special library collections acquired stores Gebhardt's Mexican Foods Company in 1989 and is in the process of digitizing the collection and make it available through our digital portal. Readers of Top Shelf, UTSA Libraries Special Collections blog, have already been introduced to photographs of the collection. Now, images of over 100 labels of products are also available Gebhardt digital.utsa.edu.
